What's inside — and why the form matters

Butterfly Pea Flower — whole

Clitoria ternatea, known across India as aparajita. Whole dried flowers, and the reason the cup turns a deep blue within seconds of the water going in. That colour comes from anthocyanins — the same family of plant pigments found in blueberries and black rice — and it is real, not a dye.

Squeeze a little lemon in and watch it turn violet. The anthocyanins shift colour with acidity, which is a genuinely useful thing to know and a good trick to show someone. We keep the flowers whole because broken petals lose colour to the packet before they ever reach your cup, and because a whole flower opening in the water is half of what you're paying for.

Fenugreek — lightly crushed

Trigonella foenum-graecum. Methi seed, cracked just enough to open the seed coat and no further. Fenugreek carries galactomannan, a soluble fibre that swells and turns faintly viscous in water — which is precisely why methi seeds have been soaked overnight in Indian homes for as long as anyone can remember.

Why lightly, not heavily: a hard-crushed fenugreek seed floods the cup with bitterness and takes over everything else in the blend. Cracked lightly, it releases across the full three minutes and stays in proportion. It is the ingredient in this blend where the degree of crushing matters most.

Ginger — fine cut

Zingiber officinale. Dried adrak, cut fine rather than powdered. Ginger holds its gingerol and warm pungency in the oils of the rhizome, and ground ginger loses much of that to the air within weeks of milling. A fine cut keeps the surface area high enough to infuse quickly across three minutes while holding onto far more of the aroma. Powdered ginger would also cloud the cup and hide the blue, which rather defeats the point.

Dandelion Leaf — cut

Taraxacum officinale. The leaf, not the root — a distinction worth making, because they are different ingredients with different characters. Dandelion leaf is a traditional bitter green, eaten and infused across many food cultures, and it brings a clean, slightly bitter backbone that keeps this blend from tasting like a soft drink. Cut rather than powdered so it steeps clear.

Lemongrass — fine cut

Cymbopogon. Stalk, cut fine. Its citral is what gives the blend its lift — the bright, almost lemony top note you get in the first sip. Lemongrass cut too coarse won't release inside three minutes; ground to powder it turns dusty and clouds the water. Fine cut is the form that gets the aroma out and leaves the cup clean.

Spearmint — cut leaf · Cut so the leaf keeps its structure and its cooling finish.

Why an infusion, not a capsule

Whole, cut, crushed — each chosen separately. Grinding everything uniform would be cheaper. It would also cloud the water and kill the colour, over-extract the fenugreek into bitterness, and blow off the ginger's aroma. Flowers stay whole. Leaves and stalks are cut. Only the fenugreek seed is cracked, and only lightly.

Hot water is an extraction method, not just a vehicle. Steeping pulls water-soluble compounds — the anthocyanins, the citral, the fenugreek's soluble fibre — into a form your gut meets already dissolved. Nothing has to break down first.

Nothing in here that isn't a plant. No binders, no fillers, no flow agents, no magnesium stearate, no gelatin. No sweeteners, artificial or otherwise. A capsule needs those things to hold its shape. An infusion needs none of them.

A cup you'll actually want. This is the practical case for an infusion over a pill. Nobody looks forward to a capsule. A bright blue, faintly citrusy cup with no sugar in it is something you might genuinely reach for at four in the afternoon instead of the thing you'd otherwise have reached for.

Pyramid bags, not flat. Whole butterfly pea flowers need room to open. A flat bag presses them into a wafer and the colour never fully releases. The pyramid gives 2.5–3g room to expand.

The bag breaks down. Biodegradable mesh, not nylon or PET. No plastic, and no microplastic shedding into hot water.

How to brew it

1. Place one infusion bag in a cup.
2. Add hot water, not boiling — let freshly boiled water rest for a minute. Boiling water dulls the blue and pulls harshness out of the fenugreek.
3. Steep for 3 minutes.
4. Remove and drink. Add a squeeze of lemon if you want to watch it turn violet.

Each bag takes a second steep at 5 minutes, though the first cup is the better one. It also cools well — brew, chill it, and drink it cold over ice.
